Place the sea bass over a salt bed for anhour.Remove the salt and keep in olive oil for 12 hours. Remove the sea bass loins, drain and dry them in paper towel to withdraw the excess olive oil. Remove the skin and cut in thin slices. Finalize with a thread of olive oil. Serve with various lettuces, toasts and a Salsa Aioli.
